LA JOLLA – Now that we’re heading into fall, I am inspired by a squash harvest from the garden for a healthy version of spaghetti.

The dessert surprise is inspired by Australian-born friend Janet Sprintall, who introduced me to Tim Tams. It provides a surprising touch for a cool dessert. And thank you for the support. Five pounds down so far!

Healthy squash spaghetti

30 minutes

Ingredients: Squash, garlic, olive oil, tomatoes, ground meat, and Parmesan cheese.

Tools needed: Cooking pan, cover for pan, spiralizer, bowl, cutting board, sharp knife, garlic press, 2 mixing bowls, 2 plates, 2 large cooking spoons.

Prep and serve: For 2 people, cook 1/2 to 1 pound beef, while cooking spiralize (spaghetti noodle size) a zucchini squash, set aside, when beef is cooked set aside and cover in bowl, in same pan sauté 10 cloves crushed garlic, set aside in a bowl.

In same pan, pour 1 cup olive oil place spiralized squash in and gently toss, cook with cover until al dente, divide squash onto plates, put ½ of cooked meat on top of each, then ½ garlic, liberal parmesan, and garnish with tomatoes. Enjoy!

Ingredients: Monkfruit, Tim Tams (a chocolate wafer cookie), yogurt, passion fruit, blackberries, mint, frozen pineapple chunks.

Tools needed: Blender, spatula, tablespoon, 2 serving cups.

Prep and serve: For 2, blend 1/2 cup yogurt, 1 cup pineapple chunks, and 2 heaping tablespoons monk fruit, pour half into a serving cup, break up 1 Tim Tam cookie into each, top with 4 passion fruits, mint, and blackberries. Enjoy!
