With the opening of its new bayside location still several months away, Carnitas’ Snack Shack will park a food truck at the embarcadero beginning next week to serve patrons, the Port of San Diego announced Tuesday.

In May, port commissioners approved a lease with the owners of the pork-serving eatery to open a walk-up cafe site that was included in a recent makeover of the downtown waterfront.

The restaurant, at 1004 N. Harbor Drive, isn’t scheduled to open until January.

Until then, the food truck will be open for business Wednesday through Sunday each week until the cafe is ready, starting Aug. 26, according to the port.

The hours will be 10 a.m. to 7 p.m., with some variance possible because of seasonal changes and weather.

Carnitas’ Snack Shack originated with a hole-in-the-wall location on University Avenue in North Park that became famous for its good food and long lines on weekends. A second location opened in Carmel Valley last year.
