The Pacific Standard restaurant quietly opened this week in the historic Art Deco building that was once home to Fat City and China Camp.

The new restaurant, which is in soft launch and will open officially in August, offers picturesque bay views from an expansive 4,100 square-foot indoor/outdoor property on Pacific Highway in Little Italy

Executive Chef Giselle Wellman, who was a Bravo TV Top Chef in the last season, is bringing coastal-inspired, rustic-refined cuisine to the new restaurant. She is joined by an all-female team of
sous chef Ami Cisneros and pastry chef Kaitlyn Dashnaw.

Menu items such as smoked trout rillettes, steak frites, cassoulet and shrimp toast are based on classic techniques and quality local ingredients from Suzie’s Farm, Bird Rock Coffee Roasters, Malahat Spirits, Prager Brothers Bakery, Gelato Vero and other local sources. Pacific Standard’s goal is “to bring simple, nostalgic, crave-worthy dishes to the table.”

The new restaurant is open now for breakfast Monday through Thursday from 6 a.m. to 10 a.m. and for dinner seven days a week from 5 p.m. to 10 p.m. The restaurant is located at 2137 Pacific Highway.
