Draft Republic, a new “beer-centric” gastropub by the Cohn Restaurant Group, opened in La Jolla’s UTC community with 36 beers on tap and popular table games.

“Draft Republic is a place to enjoy a good brew with good friends,” said James Stephenson, operations manager for the Cohn Restaurant Group.

The executive chef is New Zealand-native Mike Camplin, who supervises a menu of innovative American cuisine featuring a charcuterie program with a rotating list of house-made sausage. Other selections include Buffalo Buttermilk Chicken Lollipops, the Brie Burger with onion jam served on a pretzel bun, and the Peppered Skirt Steak Flatbread.

The bar focuses on San Diego craft beer in addition to four taps dedicated to house-made kegged cocktails, including the Republic Mojito and the French Revolution.

The new restaurant is located at the former La Jolla Strip Club. Its decor features a patriotic color palette of red, white and blue, and incorporates several oversized art pieces that spotlight past U.S. Presidents. There is a “Think Out Loud” wall — an open space for guests to share comments, thoughts and anecdotes.

Cohn Restaurant Group owns and operates more than 21 restaurants in the San Diego area and two locations in Maui.
