So many record-breaking hot days lately!

One way to help beat the heat is to assemble delicious no-cooking recipes. You won’t add heat to your home, and it helps your body temperature cool and refresh itself. Tip for your pets: freeze bits of tinned cooked meat with water in ice trays for a cooling and hydrating treat!

15 minutes, plus 1 hour chill time

Ingredients: Avocado, bacon avocado if you can find, chicken broth, garlic chives or garlic and chives, yoghurt, cilantro, English cucumber, green jalapeno.

Tools needed: Blender, spoon, measuring cup.

Prep and serve: For two, blend 1 avocado, ¼ C chicken broth, 3 T yogurt, ½ English cucumber, juice of 1 lime, 1 green jalapeno de-seeded, 3 T garlic chives, blend, ¼ C chopped cilantro, add water if necessary for consistency preference, chill in fridge for 1 hour, blend again, pour into serving cups, decoration ideas, and chopped seafood. I chose lobster leftovers, shrimp, croutons, and dabs of yogurt.

Cooling watermelon gin and tonic

10 minutes, plus 2 hours chill time

Ingredients: Seedless watermelon, gin, tonic water. I prefer sugar-free, mint.

Tools needed: Blender, spatula, spoon, serving flutes, and a shot glass.

Prep and serve: For two, chill in fridge 1 watermelon for 2 hours, blend/liquify 2 shots gin, 2 cups watermelon, 1 lime juice, 8 ounces tonic water, pour into serving glasses, decorate with mint leaves, Enjoy!
