Starting this year, I am sharing my own New Year recipe ideas that are super easy, tasty, and fast for your consideration.

Goat cheese and crackers with candied walnuts, ginger, and sesame!

10 minutes

Ingredients: Carr’s Crackers plain, goat cheese, sesame ginger dressing, fresh mint, walnuts, and brown sugar.

Tools needed: 1 saucepan, cooking spoon, cutting board, sharp knife, small spoon, plate.

Prep and serve: In a saucepan, cook and simmer ½ cup water and ½ cup brown sugar, stir in approx. 2 cups walnuts until nuts are covered (candied), take off heat, let cool. On a plate, place on each cracker a 1/3-inch slice of goat cheese, make an impression in the middle of the cheese with a small spoon, fill the impression with sesame ginger dressing, place 1 candied walnut on top, cut fine mint and place around the edges. Enjoy!

Chula salmon with honey orange pomegranate sauce!

20 minutes

Ingredients: Chula Seafood salmon (save money, buy fish sold fresh wholesale to the public), orange juice, Manuka honey, and pomegranate from the garden.

Tools needed: Large saucepan with lid, small saucepan, cooking spoon, spatula, measuring cup, tablespoon, and sharp knife.

Prep and serve: Poach salmon to your liking, skin side down in a saucepan filled with ¼ inch of water and cover on, while cooking, heat 1 C orange juice with 5 T honey until just simmering, place salmon on a plate, add sauce and pomegranates, Enjoy!

P.S. – Save the poaching water to add to dog or cat food.
